All Jethro's sauces are great for experimenting with - but here are a few tried and tested tips to get you going!
Bacon and Green Bean Salad
Bacon & Green Bean, Boil new or salad potatoes till done. Halve if necessary and keep warm. Lightly cook fine green beans, drain and keep warm. Saute bacon cubes, toss with the potatoes and beans รข€“ dress with Irish Whiskey & Mustard Vinaigrette.
Beef Stroganoff
Marinate 750gr beef cut in thin strips. Cook finely chopped onion with butter and olive oil. Remove, cook sliced mushroom in a little more oil. Season and remove. \n\nMelt more butter, when foaming, add beef and stir fry till nearly cooked. Return onion and mushroom to pan. Stir in 1tsp mustard, paprika and 200ml sour cream. Heat through and serve over rice.
Braised Pork Shoulder Steaks with Parsley Mash
Marinate shoulder steak in Ginger Soy Molasses. Fry sliced onion and garlic in a little oil in a casserole dish. Remove. Gently seal the steaks in the oil. Add the onions and some sliced fresh ginger. Cover steaks with stock and add in any left over marinade. Braise in a medium oven for 40-50 minutes. Serve with parsley mash.
Cajun Prawn Kebabs with Satay Sauce
Buy prepared prawn skewers or shelled tiger prawns. Marinate and skewer if necessary. Mix reserved marinade, 4 tbsp crunchy peanut butter and splash of water. Stir and heat to boiling. Grill prawns 2-3 minutes each side over hot coals. Serve over rice or noodle/beansprout mix with sauce.
Chargrilled, Marinated Mediterranean Vegetables
Quarter and seed red and yellow peppers. Slice courgettes lengthways. Slice aubergines on the diagonal. Brush with marinade and grill till softened. Cool and dress with herbs.
