All Jethro's sauces are great for experimenting with - but here are a few tried and tested tips to get you going!
Colourful Chicken Salad
Combine torn radicchio leaves, sliced red onion, sliced red and yellow peppers and avocado chunks. Dress with Ginger Orange sauce. Fantastic with grilled chicken breast marinated in Amadou BBQ Sauce. Sweet and spicy!
Fragrant Roast Chicken
Pour marinade or sauce inside chicken, gently tip to coat all over the inside. Roast as usual, drizzling marinade over outside skin towards the end of cooking. Match the side dishes to the meal with your chosen sauce. For example: Lemon Chilli Coriander â€“ pilau rice mixed with prawns and peas. Cajun Lime Jalapeno â€“ roast sweet potatoes. Lemon Bay Rosemary â€“ garlic mash and green vegetables.
Ginger and Sesame Chicken Wings
Coat Â½ Kg chicken wings in Ginger Orange Sauce. Sprinkle over 50gr sesame seeds and marinate for as long as possible, even overnight. Roast at 200C for 30-45 minutes till well done and sticky. Serve hot or warm.
Green Jalapeno Falafel
Blitz one can of chickpeas in the blender till fine - stir in a good dollop of Green Jalapeno Ketchup. Sprinkle in a little flour, salt and pepper. Mix and add a few drops of water if it is too dry. Form into little balls, deep fry for a couple of minutes, drain - and serve in pitta or wraps with chopped salad, hummus and a dash of Green Jalapeno Ketchup.
Hot Bacon & Chicken Salad
Fry cubed bacon and chicken strips until well done and crispy. Pile mixture over a mixed leaf salad and dress with Cranberry Vodka Vinaigrette and croutons. Scatter with chopped herbs and a grind of pepper.
