DIPS, DRESSINGS AND SALADS



Colourful Chicken Salad

Combine torn radicchio leaves, sliced red onion, sliced red and yellow peppers and avocado chunks. Dress with Ginger Orange sauce.

Fantastic with grilled chicken breast marinated in Amadou BBQ Sauce. Sweet and spicy!

Patatas Bravas

Peel potatoes and cube into 1 inch pieces. Dry and fry until golden and crispy. Drain, salt and serve dressed with Red Chilli & Garlic Sauce and a splash of thick sour cream.

Variation: Red Chilli Mayonnaise – stir a spoonful of Red Chilli & Garlic Sauce through mayo or crème fraiche – serve with everything!

Bacon & Green Bean Salad

Boil new or salad potatoes till done. Halve if necessary and keep warm. Lightly cook fine green beans, drain and keep warm. Saute bacon cubes, toss with the potatoes and beans –

Dress with Irish Whiskey & Mustard Vinaigrette

Mixed Platter with Sweet Ginger Dip

Combine hors d’oeuvres: baby spring rolls, breaded chicken or fish goujons, stuffed chicken wings, prawn toasts, crunchy crudites, baby ribs etc.

Decorate with coriander and spring onions and serve Ginger Chilli or Ginger Lime Sauce in dipping bowls.

Bourbon Orange Bean Salad

Mix one can each of flageolet, borlotti and red kidney beans. Add in chopped spring onion, chives and a small red chilli.

Dress generously with Bourbon Orange Vinaigrette and a grind of pepper.
