Lemon chilli marinated chicken

Jethro’s Lemon Chilli & Coriander marinade, is perfect for marinating any meat, but works exceptionally well with chicken. The hint of lemon enhances the aromatic spices, where the heat of the chilli bursts through. In this recipe we use chicken breast, but works equally as well with chicken legs and thighs. For best results prepare the chicken at least 2 hours before cooking.
Ingredients
4 Chicken Breasts
2 tbsp Jethro’s Lemon Chilli Marinade
To serve
Goes well with salads; roasted veg; cous cous or simply serve in wraps for a lean tasty meal
Method
Slash the chicken breasts 2-3 times, and add to a bowl. Coat with about 2 tbsp of Lemon Chilli Marinade, cover and chill for at least 2 hours.
When ready to cook, preheat the oven to 200C/180Cfan/Gas mark 6
Transfer the chicken to a large baking tray, and roast for 30-35 minutes, turning once, until the chicken is cooked through.
Serve as desired
