About This Recipe

Easy-to-make, mild and healthy, this chicken curry recipe is a Jethros favourite. It's totally versatile - you can add in different veggies or easily make it vegan. Create a creamy version by adding in coconut milk or adjust the spice level by adding a dash of Naga Fire for a hotter version. A totally moreish curry that everyone will love.

  • 1 tbsp Olive Oil
  • 4 Chicken breasts diced (roughly 600gr)
  • 1 large Onion, peeled and chopped
  • 1 tbsp Turmeric powder
  • 1 tsp mild Curry powder
  • 1tsp Garam Masala
  • 400gr tin chopped Tomatoes
  • 1 tbsp Tomato paste
  • 2 tbsp Nom Nom Sauce
  • 400gr tin Chickpeas (optional)
  • 100gr Spinach (optional)

To serve:- Rice, Naan Bread

Method
  1. Heat oil in a large frying pan over a medium-high heat.
  2. Add the onion to the pan and cook for 5 minutes, stirring often, to soften.
  3. Add the chicken and cook for 5 minutes, turning occasionally, until sealed.
  4. Add the curry powder, garam masala and turmeric. Stir and cook for a further minute.
  5. Add the Nom Nom sauce, tomato puree, tinned tomatoes. (Optional- add in chickpeas and/or coconut milk and/or spinach if using). Bring to a gentle bubble, then simmer gently, stirring occasionally for 10 minutes – until the chicken is cooked through.
  6. Serve with boiled rice and naan bread

Note : If you would like to thicken the curry, leave simmering for a further 10 minutes, or stir in a cornflour slurry (1 tbsp cornflour mixed with 2 tbsp cold water)
