About This Recipe

Loaded sweet jacket potatoes, with a smokey chickpea houmous, and a crunchy seed and chickpea topping. A high fibre healthy light meal, or a side paired with marinated chicken skewers.

Ingredients
  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • 1 x 400g tin chickpeas
  • 2 tbsp Grandpa Joe's Smokey Chipotle
  • 250g washed spinach
  • 20g pumpkin seeds

Optional

  • Sprigs of Parsley to garnish
Method
  1. If using oven, preheat to 220C, fan 200C, gas 7
  2. Scrub sweet potatoes and pierce a few times with fork and microwave on high for 10 minutes, turning halfway.Drizzle with 1tsp oil and season with salt & pepper. Either bake in oven, or place in air fryer for 10 minutes or until tender, and skin crisped up
  3. Meanwhile drain the chickpeas, reserving a small amount of liquid, and empty 2/3 contents into a food processor together with 2tbsp of Grandpa Joe's and blitz until smooth. Add some of the reserved liquid if needed. Season with salt & pepper. Alternatively blitz with a hand blender.
  4. Wilt the spinach in a lidded container in a microwave or cook in a lidded pan
  5. Heat the remaining oil in a small frying pan and add pumpkin seeds and remainder of chick peas. Heat until pumpkin seeds start to pop and sizzle until nutty fragrance,(1-2min) stirring contstantly, do not allow to burn.
  6. Split the sweet potatoes and top with drained spinach, then the houmous, and sprinkle over the chickpea and seed mix. Garnish with sprigg of parsley if using
